Method
-
Pat the chops dry, then toss with the oil, garlic powder, thyme, salt, and pepper.
-
Arrange in the air fryer basket in a single layer, without touching.
-
Cook at 400°F for 6 minutes.
-
Flip and cook until deep golden brown and the centers read 140°F, another 5 to 7 minutes.
-
While the chops cook, mash the butter with the grated garlic and parsley into a rough compound butter.
-
Rest the chops 5 minutes, then top each with a spoonful of the garlic butter and let it melt in before serving with flaky salt.
Notes
Boneless and ¾-inch is the sweet spot here — thick bone-in chops need longer than the crust can hold before drying out, and this cut hits 140°F right as the outside turns deep gold. Pull them the moment they get there; pork keeps climbing a few degrees as it rests.
The compound butter is doing what a pan sauce would do in a skillet recipe, just without the skillet — melted garlic and parsley pooling into every crack in the crust. Make a double batch and keep the extra in the fridge for steak or corn on the cob.
