Ham and Swiss Sliders with Poppy Seed Butter

A whole pack of soft rolls sliced once, layered with deli ham and Swiss, and baked under a poppy seed mustard butter until the tops go glossy and the cheese runs.

Method

  1. Preheat the oven to 350°F and butter a 9x13 baking dish.

  2. Without separating the rolls, slice the whole slab in half horizontally and set the bottom half in the dish.

  3. Layer the ham and all but 2 slices of the Swiss evenly over the bottom half, then set the top half of the rolls back in place.

  4. Whisk together the melted butter, mustard, poppy seeds, brown sugar, Worcestershire, and onion powder.

  5. Pour the butter mixture evenly over the top of the rolls, letting it soak down into the seams.

  6. Tuck the reserved 2 slices of Swiss over any bare spots on top.

  7. Cover with foil and bake until the cheese has melted, about 15 minutes.

  8. Uncover and bake until the tops are glossy and lightly browned, another 5 minutes.

  9. Let rest 5 minutes, then cut along the roll seams into individual sliders.

Notes

Keep the rolls connected until after they’re filled — cutting the whole slab in half horizontally instead of separating and stacking individual rolls is what makes this a five-minute assembly instead of forty. The butter needs those seams intact to pool and soak in rather than running off the sides.

Swap in turkey or roast beef for the ham without changing anything else, and provolone works if Swiss isn’t in the house. These reheat well covered in foil at 300°F, which makes them one of the few party foods worth making the morning of instead of racing the clock right before people arrive.
