Stir the peanut butter and honey together in a bowl until no streaks remain.

Add the oats, chocolate chips, chia seeds, vanilla, and salt, and fold until the oats are evenly coated and the mixture holds together when pressed.

Cover and chill 30 minutes, until firm enough to shape without sticking to your palms.

Roll into 1-inch balls, pressing each one firmly so it holds together.

Store in an airtight container in the fridge.
Notes
The mixture looks too loose to roll straight out of the bowl — that’s the chilling step’s job, not more oats. Add extra oats only if it’s still sticky after the full 30 minutes.
These keep in the fridge for a week and freeze well past that, so double the batch if you’re making them for the week ahead. Swap the chocolate chips for raisins or chopped dried apricot if you want it less like dessert.
