Skillet Steak Quesadillas with Pepper Jack

Skillet Steak Quesadillas with Pepper Jack

Method

  1. Season the steak all over with cumin, chili powder, and salt.

  2. Heat the oil in a large skillet over high heat until shimmering, then sear the steak 3-4 minutes per side until deeply browned and a thermometer reads 130°F for medium-rare.

  3. Rest the steak 10 minutes, then slice thin against the grain.

  4. Wipe out the skillet, add the bell pepper and onion, and cook over medium-high heat until softened and charred at the edges, about 5 minutes.

  5. Lay 4 tortillas flat, scatter cheese, the sliced steak, and the pepper-onion mixture over half of each, then fold to close.

  6. Wipe the skillet clean, set over medium heat, and cook each quesadilla 2-3 minutes per side until the tortilla is crisp and golden and the cheese has fully melted.

  7. Cut into wedges and scatter with cilantro.

Notes

The steak wants a screaming-hot pan and a real rest — slice it too soon and the juices puddle in the tortilla instead of staying in the meat. If the crust looks pale after four minutes, the pan wasn’t hot enough; let it heat longer next time rather than cooking the steak longer.

Leftover grilled steak or a rotisserie chicken both work in place of the seared skirt steak, no other changes needed. Serve straight from the skillet with lime wedges and sour cream — nobody is waiting for you to plate this.
