Triple-Decker Turkey Club Sandwich

Three slices of toast, bacon fried until it snaps, and enough turkey and tomato to need a toothpick to hold it together.

Method

  1. Fry the bacon in a skillet over medium heat until deeply crisp, about 8 minutes, then drain on paper towels.

  2. Toast the bread until golden and firm enough to hold its shape.

  3. Spread mayonnaise on one side of all six slices.

  4. {“Build the first layer on one slice of toast” => “turkey, a few lettuce leaves, then a second slice of toast, mayo-side up.”}

  5. {“Add the second layer on top of that slice” => “tomato, salt, pepper, bacon, then the final slice of toast, mayo-side down.”}

  6. Spear all four corners with toothpicks, slice into triangles, and serve.

Notes

The second slice of toast in the middle is what makes it a club and not just a sandwich with a lot of turkey on it — it keeps the wet layer (tomato) from ever touching the wet layer (mayo, lettuce) below, so the bottom half doesn’t go soggy before you finish it.

Skip the toothpicks and it falls apart on the first bite; push them through all four corners before you cut, not after.
